
Venison food and wine pairing
In the San Marcos Record article entitled 'A Hunter's Cuisine,' Melissa Dunson offers tips on preparing a variety of venison-based meals, including hints on how cooks can work with the wild game's natural flavor.
Local hunters, processors and the Department of Conservation offer advice on how to properly cook, clean and store venison, including ways to keep the meat from tasting 'gamey,' which animals in the herd have the best meat, and how to keep the moisture in this very lean cut of meat.
Dunson also offers recipes for Swiss venison steak, Venison chili and Summer sausage.
Venison and other game meats match well with a big, bold wine like Zinfandel.

Zinfandel, huh? I have always steered clear of fruit-forward wines with venison.
I see you linked to a Rioja and game pairing, however, which is what I do most of the time. I like the dustier, leathery Portuguese, Spanish and Southern Italian reds with deer, elk and antelope more than a Zin, which I tend to eat with duck or, to be honest, by itself.
Incidentally, I am reasonably sure no one hunts deer with an AK-47, as your picture shows. It is actually illegal in several states...
I fell that a Cabernet pairs very well with with Venison or other game meat. I think the rich aromas and the undernotes of a good Cabernet (cherry, black current and berry) help to enhance the flavor of most wild game meats, especially venison.
I am shooting my boyfriend's sniper rifle in the photo, which he maintains he actually COULD hunt with. I just shoot firearms for fun, though.

Ahem. Apparently there are too many firearms in the collection. This is a photo of the RPK, which Jimmy continues to maintain that he could hunt with, especially if the deer had armor on, as long as he had only a five round magazine. He is looking for many deer to be gathered in a herd, so he could lay down suppressive fire.

Ha! Those would be some mean, ornery deer. And since you are based in upstate New York, I totally understand your boyfriend's need to lay down suppressive fire on a herd o'does.
I am from Jersey, and one of my best friends is a deer hunter in upstate. Youse is crazy peeple up dere...)
Did I mention that my boyfriend is active duty in the Army?
